How to read the table
HRC is the Rockwell hardness the steel is typically taken to in a kitchen knife. It is the single number most often quoted and the most often misread: it tells you how hard the steel is, not how good the knife is. A well-ground 60 HRC blade out-cuts a badly-ground 64 HRC one every time. Our HRC guide covers what the number does and does not predict.
The four 1-to-5 scores are our editorial comparison, not measurements. They place each steel relative to the others in this table, which is the question people actually have — "is Aogami Super really that much better than VG10?" — rather than an absolute figure that would imply a precision nobody has. Where a maker's heat treatment differs, the real knife will differ too.
Ease of sharpening is scored so that 5 is easiest. It is the property people forget to weigh, and the one they feel most often: a steel you dread sharpening is a steel you let go dull.
The trade-off, in one paragraph
Everything in this table is downstream of two decisions the steelmaker made. How much carbon sets how hard the steel can get, and therefore how long the edge lasts and how readily it chips. How much chromium sets whether it rusts — but chromium forms hard carbides, and those carbides are what fight your whetstone and blunt the very finest edge. That is why the keenest, easiest-to-sharpen steels here are also the ones that rust in minutes, and why the powder stainless steels that break the trade-off cost what they cost.

Two honest warnings. First, steel is not the main thing: grind, heat treatment and the maker's consistency matter more than the name stamped on the blade, and none of them appear on a spec sheet. Second, do not buy carbon steel as a gift unless you know the recipient wants the care routine — a rusted knife is a worse present than a boring one.

Which Japanese knife steel is best?
There is no single best — the four properties trade against each other. If you want one answer for a first good knife, VG10 or Ginsan: both run around 60–61 HRC, hold an edge well, sharpen easily and do not rust. Choose SG2 if you want the longest edge life and will accept slow sharpening; choose Shirogami #2 or Aogami #2 if you enjoy sharpening and will dry the blade every single time.
Is carbon steel better than stainless for kitchen knives?
Carbon steel takes a keener edge and is far easier to sharpen, because it has no hard chromium carbides fighting the stone. Stainless does not rust. That is the whole trade. Modern powder stainless such as SG2 closes most of the performance gap, so unless you actively want the sharpening experience and the patina, stainless is the sensible choice for a home kitchen.
What HRC should a Japanese knife be?
Most Japanese kitchen knives run around 60–63 HRC, against roughly 54–58 HRC for a typical German knife. Harder holds an edge longer but chips more readily. Above about 64 HRC you are in specialist territory — the edge lasts a very long time but the knife is unforgiving of twisting, bones and frozen food.
Which knife steel is easiest to sharpen?
Plain carbon steels — Shirogami #1, #2 and #3 — are the easiest, because they have very few hard carbides. Ginsan is the easiest stainless and is often described as sharpening like white steel. The hardest to sharpen are the powder steels: SG2, HAP40 and especially ZDP-189, which realistically needs diamond plates.
What does the difference between blue and white steel actually mean?
White steel (Shirogami) is nearly pure iron and carbon. Blue steel (Aogami) is the same base with tungsten and chromium added, which forms harder carbides. The result is that blue holds its edge longer while white takes a slightly keener edge and is easier on the stone. Neither is stainless — both rust.
Are the ratings in this table measured?
No. The hardness ranges are the figures commonly published for these steels in kitchen knives, but the 1-to-5 scores for edge retention, toughness, rust resistance and sharpening are our editorial comparison, not laboratory measurements. They are useful for ranking steels against each other, not as absolute values. Heat treatment varies between makers, and a well-made knife in a modest steel beats a badly-made one in an exotic steel.
