What makes a useful question
The most useful thing you can tell us is what you actually cook on a normal week, not what you would like to cook. A knife chosen for the dinner you make four times a week will serve you far better than one chosen for a dish you make twice a year. After that, in rough order of how much they change the answer:
- Budget — it decides the steel more than anything else, and there are good answers at every level.
- Your board and your kitchen — a small board rules out a 240 mm blade however good it is.
- How you feel about maintenance — carbon steel rewards care and punishes neglect; stainless forgives both.
- What you already own — the best second knife is the one that covers what your first one cannot.
- Which hand you cut with — essential if a single-bevel knife is on the table.
What you will get back
A short written answer: the knife type, the length, the steel family, and the reasoning, including what you give up with our choice. Where it helps we will point you to the guide that explains the trade-off in full, so you can check our reasoning rather than take it on trust.
What you will not get: a sales pitch, a discount code, or a recommendation for something we have not been able to justify. If your question does not have a clear answer — some genuinely come down to taste — we will say so and tell you what to hold in your hand before deciding.
Prefer an instant answer?
For the common cases, the four-question knife quiz gives you an answer straight away. For steels specifically, the steel comparison table lets you sort by what you care about, and the size guide converts any length.
Frequently asked questions
Is the advice really free?
Yes. There is nothing to buy — our shop has not opened yet — so there is no pitch attached. We answer because the questions people actually ask are the best guide to what we should write and, later, what we should stock.
Will you recommend knives you sell?
We do not sell any knives yet. When we recommend something, it will be a type, a size and a steel, and where it helps, makers or lines worth looking at from anywhere. If the right answer is a knife we will never stock, that is the answer you will get.
Will you add me to a mailing list?
Only if you tick the box that asks for it. Otherwise we use your address for one thing: replying to your question. You can ask us to delete the exchange at any time.
What if I am left-handed?
Tell us in the form — it matters. Most double-bevel knives work in either hand, but single-bevel knives such as a yanagiba or deba are made for one hand only, and some handles are shaped for right-handers. We will steer around those.
How is this different from the knife quiz?
The four-question quiz gives an instant answer for the common cases. This is for everything the quiz cannot weigh: a particular budget, a small board, a knife you already own and want to complement, a gift for someone else, or a dish you cook every week.
